Happy S’mores Day!

No campfire is complete without toasted marshmallows. And toasted marshmallows are not complete until they have been sandwiched between two graham crackers with a piece of chocolate. Yes, we are talking about that ooey gooey campfire institution, s’mores.

With today, August 10th being National S’mores Day we thought we would share our favorite s’mores variation—Double Fudge Brownie S’mores (no campfire needed).

DOUBLE FUDGE BROWNIE S’MORES

INGREDIENTS:

•Nonstick cooking spray
•15 graham crackers
•1 package (2 lbs.) Lehi Roller Mills Double Fudge Brownie Mix
• ¾ cup water
• ¾ cup vegetable oil
•1-½ cups Chocolate Chips
•2 cups miniature marshmallows

BAKING INSTRUCTIONS:

PREHEAT oven to 350° F.

SPRAY 9×13-inch glass baking pan with nonstick cooking spray.

COVER the bottom of the pan with graham crackers.

COMBINE Lehi Roller Mills Double Fudge Brownie Mix, water and oil in medium bowl and mix until blended. Stir in 1 cup chocolate chips. Spread over graham crackers in pan.

COVER the top of the brownie mix with the remaining graham crackers.

BAKE for 20-22 minutes; remove from oven.

SPRINKLE marshmallows over warm brownies and return to oven.

BAKE for 2-3 minutes.

BROIL for 30 to 45 seconds or until marshmallows are light brown. Watch carefully as browning occurs very fast! Remove from oven and immediately sprinkle remaining ½ cup chocolate chips.

COOL for at least 1 hour at room temperature. Cut into bars and ENJOY!
