Dessert is, if you’ll pardon the pun, the icing on the cake when it comes to a good meal. Based on the French word “desservir” it literally means, “to clear the table.” Not a problem when you’re serving up everyone’s favorite sweets. Back in the day, using sugar in the kitchen was a privilege of the upper class. Sugar was a valued commodity and was hard to come by for the masses. Fortunately, the industrial revolution came along which made sugar more accessible and affordable. Since then, serving dessert has become a tradition at the end of meals. Dessert comes in as many varieties as the meals they follow. Following a few simple rules will give your dessert a little more impact. For example, heavier dinners call for lighter desserts such as a cobbler or pie. After a light dinner, you can bring out the big guns by serving fudgy brownies or a rich bundt cake. Whether you eat it at the dinner table, or reconvene after everything’s settled a bit, dessert is sure to be a crowd pleaser and will, no doubt, help clear the table.
