Happy National Sugar Cookie Day!

A Bite of History

Have you ever eaten a jumble? A plunket? How about a gemmel? Chances are you have, you just don’t know sugar cookies by these names. But these were some of the sweet treats circulating around 17th century Europe that are the ancestors of the modern sugar cookie.

Sugar cookies as we know them were made by Protestant settlers in Pennsylvania in the 1700s. In those days, they were in the shape of the state’s symbol: a keystone. Today, they come in all shapes and sizes and are used during several holidays. Like today. July 9th is recognized as National Sugar Cookie Day. So, grab your mixing bowls and let’s get started!

Scrumptious Sugar Cookies

Ingredients:

  • ½ cup butter
  • 1 ½ cups sugar
  • 1 egg
  • ½ tsp vanilla
  • ½ tsp almond extract (optional)
  • 1 ¾ cups Lehi Mills Peacock All Purpose flour
  • ¾ tsp baking powder
  • ½ tsp salt

Directions:

  1. Preheat the oven to 400° F.
  2. Cream the butter and sugar. This is what will give the cookie its cracked look and fluffy texture.


    To cream properly, take a stick (1/2 cup) of butter out of the fridge. Let this sit a couple minutes, but don’t let it soften to room temperature. You still want it firm and cool. (If you have a digital thermometer, you can check the temperature. The butter should be 60° F.) Cut up the butter into quarter-inch pieces. Beat in an electric mixer with the sugar for 5 minutes until creamy.

  3. Mix in egg, vanilla, and almond extract (almond extract optional).
  4. Add flour, baking powder, and salt and mix until doughy.
  5. Spread flour on table and roll out dough until it is about ¼-inch thick.
  6. Use cookie cutters to make circles and fun shapes!
  7. Place cookies onto a greased cookie sheet.
  8. Cook in the oven at 400° F for 11-13 minutes.
  9. Let cookies cool 5-7 minutes. Optional: Frost the cookies. (See butter cream frosting recipe and directions below!) &
  10. Enjoy!

Yields fifteen 4-inch cookies.

Butter Cream Frosting

Ingredients:

  • ½ cup softened, unsalted butter
  • 1 ½ tsps vanilla extract
  • 2 ½ cups confectioners’ sugar
  • 2 Tbsp milk
  • 3 drops food coloring (optional)

Directions:

  1. Cream softened butter, sugar, and vanilla extract until creamy.
  2. Slowly stir in confectioners’ sugar.
  3. Pour in milk and stir for an additional 2 – 3 minutes.
  4. Add food coloring as desired.

Wait until cookies are cool to add frosting. Frost cookies and make lasting memories!
