Scrumptious Pumpkin Pancakes

What is better for a fall breakfast than pumpkin pancakes? Wake up and bite into a warm pancake that will remind you of your favorite Thanksgiving treat. Whether you want to roll up your sleeves and make it from scratch or simply use our Lehi Mills Original Pancake Mix, we’ve got a pumpkin pancake recipe for you! Either way, it’s simple and delicious.

Pumpkin Pancakes (From Scratch)

Ingredients

  • 2 eggs
  • 4 Tbsp (1/2 stick) unsalted butter (plus butter for cooking)
  • 1 ¼ cups Lehi Mills flour
  • 5 tablespoon sugar
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 ¼ cup milk
  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • 1 tsp vanilla

Optional add-ins

  • ¼ cup semi-sweet chocolate chips
  • ¼ cup pecans

Directions

  1. Beat eggs in a large bowl until frothy
  2. Mix eggs with flour, sugar, baking powder, baking soda, salt, milk, and butter
  3. Stir until slightly lumpy
  4. Mix in pumpkin puree, cinnamon, and vanilla
  5. Mix in the chocolate chips or pecans (optional)
  6. Set a large nonstick pan or griddle to medium heat and let it warm for a few minutes
  7. Butter the pan or spray with non-stick cooking spray
  8. Pour pancake batter (about ¼ cup of batter for each pancake) onto pan
  9. Cook pancake for 10 minutes at 350 degrees on a griddle (medium-high heat on stovetop) or until bottom is browned, then flip and cook for another 5 minutes
  10. Serve warm and enjoy!


Pumpkin Chocolate Chip Pancakes w/ Lehi Mills Pancake Mix

There is more than one way to make pumpkin chocolate chip pancakes. Let us help you do the hard work. You can use a mix for convenience and still get a made-from-scratch taste!

Ingredients

Optional add-ins

  • ¼ cup chocolate chips
  • ¼ cup pecans

Directions

  • Pour Lehi Mills Original Pancake mix into a large bowl
  • (You could also substitute Lehi Mills Whole Grain Pancake Mix or Buttermilk Pancake mix)
  • Mix in pumpkin puree, sugar, vanilla and cinnamon
  • Add chocolate chips or pecans (optional)
  1. Set a large nonstick pan or griddle to medium heat and let it warm for a few minutes
  2. Butter the pan or spray with non-stick cooking spray
  3. Pour pancake batter (about ¼ cup of batter for each pancake) onto pan
  4. Cook pancake for about 10 minutes at 350 degrees on a griddle (medium-high on stovetop) or until bottom is browned, then flip and cook for another 5 minutes

     8.  Serve warm and eat up!

(Fun fact: Pumpkin pancakes go well with maple syrup!)
